You can set capture_method to manual under payment_intent_data when you create the checkout session
https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-payment_intent_data-capture_method
Doing that will only place a hold on the payment method rather than charging it for the payment. Once the checkout is complete, you can check if you can fulfill the product and if not, you can release the hold by canceling the PaymentIntent
