Hello! Unfortunately what you're describing isn't possible. Invoices don't use Payment Method Configurations, they use the Invoice-specific payment methods configured in the Dashboard, or you can build your own UI for selecting which payment method types to use and specify them in the API explicitly when you create an Invoice.

This is something we're working on improving, but there's no ETA for the changes yet, so I wouldn't recommend waiting for them to land.

Had to switch to Invoices to collect taxes correctly... but there seem to be a number of downsides rather than just the pure payments

I was aware of that, but these are local businesses who had simpler tax needs, so I chose to do it a different way (and also save them some money compared the the Stripe solution, admittedly)
