Right, but what about those forms exactly? Checkout (hosted or embedded) doesn't allow you to change these fields

There's very little you can customize with Checkout: https://docs.stripe.com/payments/checkout/customization

If you use the PaymentElement and integrate with the PaymentIntent and SetupIntent APIs, you can use the Appearance API to adjust colors, fonts, layout, etc.: https://docs.stripe.com/elements/appearance-api
