We don't know much about Shopify here.
The easiest way I think is to implement Prices API
You implement a script that crawls all your existing Prices and you create Stripe Prices using that API

I don't know where to write the script in Shopify.
But he idea is to write a script (using your preferred prog languge)
You fetch the list of existing prices (Shopify or other)
Call Stripe API from that script https://docs.stripe.com/api/prices/create in order to create the price
continue looping on all prices...
