Accepting Crypto payments is a preview feature, and is integrating it is discussed in the docs linked here:

Per this one only stablecoins are accepted, which seems to exclude bitcoin:

Stripe Crypto

Integrate Pay with Crypto, a fiat-to-crypto onramp, or pay out in crypto using the customizable Fiat-to-crypto onramp or the Connect-based Crypto payouts feature.

Pay with Crypto

Pay with Crypto lets you accept stablecoin payments that settle as fiat in your Stripe balance. You can accept USDC payments on Ethereum, Solana, and Polygon without the complexity of holding or converting crypto to fiat yourself.
