Hi there ๐ I'm a little confused because you seem to be comparing a Billing Portal Session with a Checkout Session (also a Checkout Session with a mode of payment should create a Payment Intent, you'd set mode to subscription to create a Subscription).
Can you share screenshots showing what fields you'd like to see that you aren't currently? My suspicion is that this will need to be feedback that I file with our teams, but would like to ensure I undesrtand what you're asking for first to ensure this isn't something that is currently possible.
The first screenshot is from the payment link that I created, second is what I see when a user has no payment method during subscription_update_confirm.

We are giving the new user an auto trial, if he wants to subscribe I'm ending the trial subscription with the status paused and using subscription_update_confirm changing from paused to active.
We want to have only one subscription per customer.
I don't think tax IDs are expected to be editable from the second screen that you shared. Instead I'm seeing the ability to edit those provided via the Update information link in the Billing and Shipping Information section in the customer portal. Do you see the ability to edit tax IDs there?
