It's a WooCommerce plugin and we use oAuth authentication to connect to Stripe app.
I've enabled GPay for connected accounts from the Stripe account where the Stripe app is created(platform)

please add a product and go to checkout page, there you can see the div container with id eh-stripe-payment-request-button

While inspecting i can see the iframe loaded by Stripe inside the div, but the button is not visible

No, I don't think so. Maybe you were looking at Test mode vs Live mode
