If you are using the standard Google Pay integration we document here

Here is our SDK Doc on the parameters you can pass when creating the PlatformPayButton

It looks like you can specify the type parameter: https://stripe.dev/stripe-react-native/api-reference/enums/PlatformPay.ButtonType.html
For a Google Pay mark without any text you can specify type: GooglePayMark
https://stripe.dev/stripe-react-native/api-reference/enums/PlatformPay.ButtonType.html#GooglePayMark
but this will only work on Android
