Ah, this isn't something you would set with Checkout at all
Once a customer is directed to the Checkout Session, a Subscription object won't be created until they submit their payment details. payment_behavior is used if you're integrating with the Subscriptions API directly, and thus using Elements instead of a Stripe-hosted payment page
