you can prefill the name field with this: https://docs.stripe.com/js/elements_object/create_address_element#address_element_create-options-defaultValues
but no, you cannot remove that field from the Address Element

yeah i know that i can prefill, but i don't want that my user can edit it multiple time
there is a way to disable the input filed

if you want more flexibility than what the Address Element offert, then I recommend not using the Address Element and add your own inputs to collect exactly the information you want.
