how do you create the Subscription? With Checkout Session, the Subscription endpoint, something else?

then the Subscription will contain a pending_setup_intent, and you can use this to collect a payment method. and then it's up to you to cancel the Subscription if the customer doesn't add a payment method with the SetupIntent
