im trying to find an example to let customers update their card on file without going to the customer portal link
we want to do it in a modal on our end

Gotcha, then you want https://docs.stripe.com/payments/save-and-reuse?platform=web&ui=elements which basically is how you collect new payment method details
And then you can delete/replace the old PaymentMethod on file
