To disable postal code collection, this can be done in Payment Element options (not Elements options in your code) by setting fields.billingDetails.address.postalCode to never: https://docs.stripe.com/js/elements_object/create_payment_element#payment_element_create-options-fields-billingDetails-address-postalCode
