I would like to hide this from the checkout page basically

I can't turn off Link as payment method, because I am using it for another purpose in my integration

So you want to turn off Link for Checkout page only?

https://dashboard-admin.stripe.com/settings/payment_methods you can turn off Link for just Checkout page from your Dashboard

Try turn off link in Dashboard, and include link in payment_method_types for those Checkout sessions that you want your cusotmer to pay with LInk
