To directly answer your first question, yes, there is a way to specify a Stripe Customer id - you can pass it as an option to the call to create a Customer Session

Gotcha! I could've sworn that I was on the same page and did not see that. Just to clarify: Customer Session is not the same as the Customer Portal Session, correct?

also there is a way to pass an email directly to the pricing table - if you command+F for "Pass the customer email" in the same doc I linked you'll find it in a separate section
