It isn't possible to have multiple line items with different currencies.
However are you asking if you can present in different currencies based on your customer?
If so, then yes, you can either use Adaptive Pricing (https://docs.stripe.com/payments/checkout/adaptive-pricing) or Manual Currency Prices: https://docs.stripe.com/payments/checkout/manual-currency-prices

I want to set amount in EUR when creating the checkout session but the user will pay in their currency just to avoid the exchange rate, so the user will pay the exchange rate not us as service provider
