Hello! You can adjust branding settings in your Dashboard here: https://dashboard.stripe.com/settings/branding/checkout
Beyond that and the docs you linked to, no, not really. You can't make adjustments to the extent you mention.
That said, you might want to use embedded Checkout on your own page instead of fully redirecting: https://docs.stripe.com/payments/checkout
With embedded Checkout you can surround Checkout with whatever you want, including your own branding and whatnot, which might solve the issue for you.

Hey by any chance I am a freelance dev who has multiple clients and they seem to like stripe a lot. The following question is unrelated to the above question btw.
One client asked me if it’s possible to integrate a stripe embedded page onto a Shopify headless store, is this possible? If you do not know then it is okay, I understand. Just thought it wouldn’t hurt to try
I don't know, that's a good question for Shopify though. We don't know what their platform/systems are capable of here.
