In any case, your Checkout Session is using the Jotform Default config. It's not the Jotform's Platform config, but the Connected accounts config related to Jotform.
I know it's confusing, for me as well, honestly.
What you can to do is explicitly set the Payment Method Configuration on the Checkout Session to be pmc_1PqVJ1JpFr4FX3WI7qZCg10u - your own Default config.
