What do you mean by "default country on Stripe Elements" in this case exactly?
When elements it mounted, the country defaults to UK, I would like this to default to Ireland when this locale is used within our app
I know I can set the name and email but the country doesnt work

I think the form will display the country based on the customer's location/IP. Not sure if defaultValues will ovewrite that.
Is there any documentation to support this or a way I can spoof my location to test?
