Because previous_attributes is still showing up on the Stripe object, I think this would be something to raise with Zapier's support. They will know more about what their integration is doing when it consumes our webhooks and how it exposes that data.
I am not sure if they will recommend an API downgrade, but if they do you can request one from our support team. https://support.stripe.com/?contact=true
