I'm not sure I exactly grasp your question. The doc outlines the options you have regarding onboarding a custom accounts without using Stripe hosted onboarding..
You can use this tool to figure out the requirements that a connected account would need to fulfill based on the capabilities you enable: https://docs.stripe.com/connect/required-verification-information
and then use that to drive your own onboarding process
