i don't see the checkout events in there
That's correct. Checkout can be used to start a Subscription, but after that you don't get any more Checkout Events.
and where i can see what information i will receive from the event ?
You can use the API reference. Different Events contain different objects. For example, an invoice.paid Event contains an Invoice object: https://docs.stripe.com/api/invoices/object
