You should create a brand new one and cancel the previous one in that case
actually now that i think about it, i might need to cancel/delete the previous subscription and create a new one as i need a new invoice to be generated too

Yeah if you upgrade you end up with "proration" and a new billing cycle and both Invoices have to be paid, it's a bit messy
that's why we usually recommend to only create the Subscription at the end once they are certain of which Price to use: https://docs.stripe.com/payments/accept-a-payment-deferred?platform=web&type=subscription
