you can combine recurring price and non-recurring pirce when creating a Chekcout Session. this is explained here: https://docs.stripe.com/payments/checkout/how-checkout-works#mixed

not directly. but once the Subscription is created, you can update this parameter: https://docs.stripe.com/api/subscriptions/update#update_subscription-cancel_at
