what's strange is that no google pay appears on the request, but it was definitely initiated as a google pay method

not sure , we don't have any logs on our side that could give any insight
Google has some debugging instructions you can try : https://developers.google.com/pay/api/android/support/troubleshooting#request-failed
also did you actually register with Google to go live?
if not that is probably the problem.
