Let’s say I want to add a 10% tax/fee. Would it be possible to add it to an invoice and make it appear as tax/custom fee?

hi! well you can create and pass your own tax rates for that : https://docs.stripe.com/billing/taxes/tax-rates
the only way to have things appear as "tax" and in the various tax_* fields in the API objects is to use those, or our automatic Stripe Tax product; if neither of those work you can add your own custom InvoiceLineItems but they won't appear as tax in the Invoice/API itself, if you know what I mean.
