Kind of. You'd need to listen for invoice.created events. When you receive that event, you'd need to update the draft invoice to set auto_advance to false. Then it won't finalize automatically after an hour

Isn't there a way to configure this as a setting in Stripe so I don't have to do it for every invoice?

So if a response to a Stripe Webhook call is not 2xx, I think Stripe retries it after 24 hrs (correct me if I am wrong)
Can I configure the retry period?
