It should go to the default payment method which switched too late
I changed it expecting it not to charge again

And now its charging the wrong payment methdo

if the invoice is not voided then it's still possible to visit the Hosted Invoice Page for the URL and pay it, which I think is what happened there. I'd recommend always voiding invoices you don't want to be payable(https://docs.stripe.com/invoicing/overview#void)
In this specific case you could perhaps refund the payment, void the invoice, and contact the customer.
No, we deleted a payment method and wanted to set another as the default and by accident deleted the current default method in the process.
