Can dynamic paymment methods still work if I pass in an array payment types on the client side of the Stripe SDK.
Nope, this should override whatever you set previously

we want to provide our users (Stripe merchants which we access through Stripe connect) the ability to utilize the automatic payment methods. it's just in some cases we know for sure some don't such as Affirm but we already have our own version of payment plans so we don't want to provide the end user the option to make a partial payment with a system that does that already on their end.

You can create custom Payment Method Configurations for your Connected accounts that configure all of this upstream and then rely on dynamic payment methods

Yes, but my challenge is that there are code paths that clearly need a specific limited set of options but still be based off of what is activated on the merchant's end.
