@brittle gust correct, we don't have an "anonymization" feature just yet and deleting a Customer just makes it unusable again, it doesn't "redact" it.
We do have a beta product/API that supports redacting the data though. I'd recommend contacting our support to ask for access: https://support.stripe.com/contact/
