I've tried that, the problem is:

The subscription is updated and paused successfully, but no webhook was triggered so I could update my documents with metadata from that purchase.

Also I have the metadata from the payment_intent, how could I access that from the paused subscription?

That's expected. Pausing the Subscription doesn't send webhooks

Yup! Usually you would just have an extra operation added to the code that initiates the Subscription pause that updates the metadata on the most recent Payment Intent
