I took a look at the webhook events you shared. It's a perfectly normal product.updated webhook event payload. I recommend you follow the steps in the guide you linked as that's our must up-to-date troubleshooting doc on this subject

As to what is going on?
Unfortunately not. This error means that one of the three values you are passing in to the construct_event function is not what we expect

SubtleCryptoProvider cannot be used in a synchronous context. Use `await constructEventAsync(...)` instead of `constructEvent(...)`
Sounds like you just need to use the await keyword, like the error says
