We're remitting insurance premium, and would definitely prefer to directly transfer funds to insurance entity (without it hitting our platform account) - is this possible?
i think the key point here is that you want to transfer funds to more than a single party. If you just want to collect payment for a single party, using direct charges would work
Do we have to pay an additional 2.9% fee when we execute a transfer?
Or only 2.9% when collecting funds from cardholder?
Stripe charges a fee when you collect payment from a cardholder. There's no fee for a Transfer

Rather than direct charge to connect account that is ultimately collecting funds
unfortunately we can't really advise on tax, you'll need to talk to an expert about that

you could, that would work too. From our perspective, you're essentially doing direct charges on different merchants. That's quite normal. As an example, if you were providing software as a service e.g. Shopify, they would charge to the merchant directly too
