Do we need to stop creating invoices and switch to using payment intents in order to achieve the pre-authorization workflow I described
Yes, unfortunately we don't support a "separate authorization and capture" step with Invoicing today

So, will the customer still receive something like a receipt after payment using payment intents? With our current workflow they would receive an invoice after payment detailing the transaction.

they can receive an email receipt but that's it. We don't support sending a real Invoice after a payment on PaymentIntent.
