as a side note, the UI for this is really jarring. The rest of the website is light and the new UI is dark. I don't mind a dark theme, but its quite disorientating switching between the two

Hmm, so theres no way to just use the old UI for missing "select all" feature?
I dont mind trialing the UI, but I need to setup 3 new webhook endpoints in test, seems theres about 40 categories, so I would need to go into each category, click all, 3 times, to set this up..
I agree, that could be frustrating for some use cases.
I've spoke to the team, were going to opt out of it for now.
We don't mind trialing it and providing feedback. However, we do need a way to be able to access the old UI for stuff that it doesn't support yet. If a feature could be added for that, we would be happy to re-enable it and continue the trial.

Between make sure to enable only the events you really need by endpoints, it's not recommended to enable all events on a single endpoint:
