for the flow outlined, the connected accounts would need to all be express accounts correct?

They can either be express accounts or custom accounts. For simplicity, I recommend express accounts.

Technically, there's nothing in the API that would prevent standard accounts from working but we highly recommend against using Standard account with the fund flow you have

There are various issues like refund/dispute liability, connected account experience etc..
