I see both Google Pay (in Chrome) and Apple Pay (in Safari)

Make sure you have live cards in both your Apple Pay and Google Pay wallets

ah ok.. i think it's coz I dont have any of those accounts as i never use them then?

Yes, the wallets will only show on the page if you have a card in the respective wallet

also I did manually the buttons that would create the sessionn with the gpay and applepay icons, is there a way i can pass the prop down to the checkout session as preferred payment method?
As in, if costumer clicks the Gpay icon, the created session default method will actually be Gpay?

No that's not possible

iv also those enabled, tho they would only show up based on user ip location?

It depends on a lot of critera (payment amount, currency, location, etc)
