Unfortunately it looks like we don't have a setting for doing that automatically. You will need to listen to the invoice.paid event and update your Customer's default payment method from there.

If I set the default on the cutomer should I also unset the subscription default payment method?

Good catch, I think if you set payment_settings.save_default_payment_method to off we should save the PM to the customer, so you should still be able to specify it as the default but it won't automatically set that on either the customer or subscription. Can you try that in test mode and let me know what happens?

We typically keep threads open for about ~20 mins of inactivity. After that we prefer that you open a new thread. We have a bot that links to old threads, so the info will be readily accessible. Closing inactive threads helps us keep things more managable when talking to many users

Would you mind answering one quick question before you close this. Which takes prority, the default payment source on a customer or subscription?
