We focus on unblocking API integrations here on this server. We don't really have a specific recommendation for the amount of information you should collect. It's up to you to determine both how much information you should collect but also what you would do with this information.
Would you have a way to verify it?
Depending on the Stripe products you integrate with, we may collect this information as well. For example, Checkout collects email addresses and card holder name. You could retrieve this information and compare it against what you had collected

I've seen some comments online of people that had to deal with some unjust chargebacks and they were more or less saying that collecting more information is a way to deal with that. Although I wasn't sure about it, that's why I asked
