I"m sorry but I'm a bit confused. How would the concept of a free trial apply to a one-off payment?

True, I guess there's that. Ideally, I'd like the one time payment to only be charged when the subscription starts.
Is there a way to delay a charge?

In that case you would not create the one-off charge during the Checkout Session
You would create an Invoice Item for the customer after the checkout session and it would get picked up in the next Invoice

It would be included on the next invoice generated by the Subscription. The one after the free trial. It would charge automatically if that is how you created your Subscription.
