I have an event observer listening for the Stripe webhook, when it is dispatched the core Stripe Generic Helper has the incorrect customer ID

Gotcha. Unfortunately we don't know anything about the way the plugin works here I'm sorry. We work with developers who write their own code end to end and I can't speak to the internals of the plugin. I'd recommend reaching out to support instead: https://support.stripe.com/contact and they can route you to the support team that helps with those plugins
