If you can't guarantee to process the order in those limits period.... one option is to collect/save the payment method (e.g. using SetupIntent) and then charge the payment method off session once the order is processed (but you can't garantee the funds are always available)

One other workaround, is to keep the funds in your Platform Stripe Balance and payout it to your platform bank account.... add funds (top-ups) to your platform balance from your business bank acocunt (https://docs.stripe.com/connect/top-ups) to covert the transfer to your Connected Accounts once the order is processed

Do I first do the payment to my platform and then transfer from there to the sellers or do I right away transfer to the sellers and delay the transfer somehow?
In your case I think the best option, is to collect the payment by your platform account and then make transfers to your connected accounts
