you can always retrieve the PaymentIntent from the checkout.session.completed event and expand it to get the balance transaction https://docs.stripe.com/expand/use-cases#stripe-fee-for-payment

yes when you receive the checkout.session.completed event you can update the PI and/or the Charge with the metadata you want
