on our side it appears as past_due, I can't confirm since I don't have access to the dashboard
but we have webhook listeners for subscription.updated to update the status on our side
in the first place why would it be paused for an unpaid invoice & why would it be past_due (on our side at least) after client paid for an open invoice

Yup, it was manually paused by someone, not one of our automatic processes. The linked request is the request that was made from the Stripe dashboard to pause that Subscription. Paused Subscriptions remained paused until they're explicitly unpaused.
