Hi there 👋 I don't believe receipt_email is expected to be populated here, since the intent that led to this was created automatically by a Subscription's Invoice.
I'd recommend retrieving the associated Customer object, and getting the email address from there:

It says this address is where stripe sends the email to for invoice
