So, I had a conversation about this with @abstract void and he / she suggested I should use payment_method_types but when I do, I am getting this error: You may only specify one of these parameters: ["automatic_payment_methods", "payment_method_types"].

Well yeah for that second request you would need to remove automatic_payment_methods.enabled: true
But I'm not sure why the first one is erroring to begin with

It is off by default right now
You want to flip that to on by default
