If you want to only process charges off-session, then I would recommend you use our Setup Intent flow where you save a payment method to a customer, after it has been created for off-session usage. https://docs.stripe.com/payments/save-and-reuse

Hey, thanks for replying!
That's probably what we're going with, but I wanted to check if we can use SetupIntents with the PaymentSheet.FlowController on iOS (where selecting a payment method is separated from payment confirmation)
because all the docs for SetupIntents only ever mention them with a full PaymentSheet
