Hey there, can you share an existing subscription example, and explain hwo you're initially creating these?
After collecting a new payment method, you can update the default_payment_method on the subscription itself, for example, or the customer invoice_settings[default_payment_method].

You can also send your customer to the customer portal to do this in a self-serve way
If you're using checkout, the customer portal is likely a good option:
