@still tree yes you do have to do that. In my head it makes a lot of sense!
That lets you do analytics for example on how often you use that specific Product/Price in the future, it lets you model different price range of no-show fees in the future to measure whether it helps or not, etc.

If you really don't want that you can create an InvoiceItem via the API with amount/currency: https://docs.stripe.com/api/invoiceitems/create
It'll get picked up on the future Invoice too
