Interac is currently only available for in-person payments

would interac work via apple pay/google pay in stripe connect, e.g. user has interac in their apple pay account, user selects apple pay as checkout option, user selects interac from within apple pay?

I don't think so. Even when a customer pays with Apple/Google Pay we still see the underlying Card
